We (obviously) mopped up all the water and sucked as much as we could out of the carpet, then dried that with a fan. We also turned the heat up all weekend hoping that the heat would help evaporate any extra water? Does anyone know if we're at risk for mold and/or anything we can do to help/fix this situation?

You did everything right. Clean the water up as fast as you can, and ventilate the home the best you can.
For carpet just rent a rug doctor or a carpet cleaning machine to suck up the water. Likely if their is any mold growth it will be in the walls or floor.
Mold is likely to grow where their is an environment for it. Such as a damp area with little ventilation.
Good luck
